This was simply delicious! Found this recipie off the web [http://www.recipezaar.com] and tried it. Found it quick and simple to make. Good for those times you need a "bao ka liao"dish to feed the hungry tummies...big and small! :p I tweaked the recipie a little by adding in garlic, onions and egg for extra flavour.

Ingredients:
1 small onion and garlic chopped
2 eggs beaten
1 lb ground beef/ chicken
1 (16 ounce) package california blend frozen vegetables / spinach / any vege of your choice
1 1/2 cups homemade chicken stock
2 tablespoons dark soy sauce
1 (3 ounce) package ramen / udon noodles

Directions:
Fry beaten eggs
Add in chopped garlic and onion
Add meat and fry
Add vegetables, stock, soy sauce and the flavoring packet from the ramen/udon noodles.
Mix well and bring to a boil.
Break noodles in half crosswise and add to vegetables.
Reduce heat; cover and simmer for 8 minutes or till vegetables and noodles are tender.
Stirring occasionally to separate noodles.

Voila! Enjoy! The house smells heavenly after that too!
